Orange cake recipe

This cake combines a sponge with the delicious flavour of orange juice.Bolo de laranja


  • 4 eggs – separate the whites from the yolks
  • 2 ½ cups of sugar
  • 2 cups of flour
  • 3 ½ tea spoons of baking powder
  • The juice of 2 medium oranges – I used Valencia ones because they are very juicy
  • Zest of half an orange
  • 3 table spoons of sugar
  • 1 medium orange for after the cake is baked


Bake it:

  1. Pre-heat oven to 180C and prep the cake tin

In a bowl:

  1. Mix egg yolks with sugar until fluffy
  2. Mix in flour
  3. Mix in baking powder
  4. Mix in the orange zest
  5. Mix in the juice
  6. Whip the egg whites until you can turn them over and they won’t fall
  7. Fold in the whipped egg whites
  8. Pour in to the cake tin and bake for 40 minutes

In a small sauce pan:

  1. Juice of the final orange with the 3 table spoons of sugar
  2. Mix until sugar as melted and disappeared
  3. Pour over the cake after you placed it in a plate.
