This cake combines a sponge with the delicious flavour of orange juice.
Ingredients:
- 4 eggs – separate the whites from the yolks
- 2 ½ cups of sugar
- 2 cups of flour
- 3 ½ tea spoons of baking powder
- The juice of 2 medium oranges – I used Valencia ones because they are very juicy
- Zest of half an orange
- 3 table spoons of sugar
- 1 medium orange for after the cake is baked
Bake it:
- Pre-heat oven to 180C and prep the cake tin
In a bowl:
- Mix egg yolks with sugar until fluffy
- Mix in flour
- Mix in baking powder
- Mix in the orange zest
- Mix in the juice
- Whip the egg whites until you can turn them over and they won’t fall
- Fold in the whipped egg whites
- Pour in to the cake tin and bake for 40 minutes
In a small sauce pan:
- Juice of the final orange with the 3 table spoons of sugar
- Mix until sugar as melted and disappeared
- Pour over the cake after you placed it in a plate.
