How are you today?
Today I’m attempting to make my first banana bread, what did you thought I was going to write about?
I had ripe bananas and I really hate food waste.
This is the recipe and below some of the pictures I’ve taken as I was making it.
3 ripe bananas
1/3 cup melted butter
1 teaspoon baking powder
A little pinch of salt
3/4 cup sugar
1 large egg that you’ll need to beat before adding to the mixture
1 teaspoon vanilla extract
1 1/2 cups of plain flour
Pre-heat the oven to 175°C (mine is a fan oven)
Line a 4×8 inch loaf tin or grease it with some butter
In a medium bowl, mash the ripe bananas until you have a mushy consistency
Add the melted butter
Mix in the baking powder and the salt
Mix in the sugar and then the beaten egg and the vanilla extract
Fold in the flour little by little to avoid lumps
Pour the mix into the loaf tin
Bake for 50 minutes to an hour
Remove from oven and let it cool completely in a rack before serving (don’t forget the toothpick trick)
I’ve added a ½ teaspoon of cinnamon just because it’s Christmas
