Me and Mr. Parker have a sweet tooth but I’m vegan and he’s not. But if it has sugar or chocolate in it he won’t say no. This is my vegan take on one of his favourite desserts.
Recipe for two:
1 pot of caramel dessert from Alpro
4 digestive biscuits
1 small knob of butter
6 tbs Creme fraiche from Oatly
3 tsp of caster sugar
2 or 3 drops of lemon juice (optional)
2 glass jars (I used GÜ ones)
Make a biscuit base by crushing the biscuits with the butter. Divide equally between the jars, flatten with the back of the spoon.
Divide the caramel pot equally between both jars and tidy it so it’s flat.
Cut 5 slices of banana and spread on top of the caramel, add as much banana as you like and do the same for the other jar.
In the bowl (cereal bowl is enough) mix the caster sugar with the creme fraiche and the lemon juice drops. Give it a taste as you might like it sweeter. Divide it between the jars covering the banana slices.
Decorate with chocolate shavings or crushed biscuit and banana chips, up to you.
