Hi, as I’m trying to reduce the amount of plastic and waste at home and improve the quality of what I eat, I’ve been trying out vegan recipes that I find online and adapting them to my personal taste.
After making this very easy recipe a few times now with both orange and lemon, I’m sharing it with you. It makes 12 portions at 280 calories each and you can change for any citrus fruit you like.
Ingredients:
275g self-raising flour
200g golden caster sugar
1 tsp baking powder
Zest of 1 orange
Juice of 1 orange
100ml of vegetable oil
170ml of water
For the icing:
150g of icing sugar
Juice of 1/2 orange
How to:
Line a loaf tin with baking paper
Pre-heat oven to 180C.
In a bowl mix your dry ingredients, flour, sugar, baking powder, zest.
Add your wet ingredients water, oil and juice
Mix until smooth, this recipe is not prone to lumps and I mixed everything with a spatula.
Pour into the tin and bake for 50 minutes or until a pick comes out clean.
Take out of the oven and leave for 10 minutes before taking out and placing on a wire wrack to cool off completely.
Make the icing by mixing the icing sugar and the orange juice, if you think the icing is too runny add a bit more of icing sugar.
Pour over the cake and use the back of a spoon or a small spatula to cover evenly.
Let it settle for a few hours and enjoy.
